I still have a question.

Then the other seafoods such as coquillage, huître, and moule… are countable, only crab not?

Why? No reason?

It depends on the context!

If you talk about the animal, then the noun « crab » is countable. But if you are talking about crab meat, then it is uncountable.

Just like beef is uncountable when you are talking about the meat, but countable when you are talking about the animal! (in french, the word beef also refers to an ox, a male cow)
